Jamie Oliver’s chicken cooked with milk, sage & lemon, seemed to be calling out to me. Whether it was in the form of a random review, or best 10 lists, finally I decided to try it. The simplicity of Jamie Oliver’s recipes always appeal to me, as he has an amazing knack for taking the best and freshest and creating dishes that become part of our everyday cooking. The reviews for this chicken are pretty constant; many people commenting that it is the “best chicken ever”. That’s a pretty good compliment. Well, I tend to agree. I’ve made it a few times now, and each time I get exactly the same results. The chicken cooked beautifully right through to the bone, with subtle flavours, and a very “more” quality. One of our family’s favourite soups is Hot & Sour Soup, slightly spicy, sweet & sour with just a few ingredients; this is perfect for a light meal. There are some additions that do make it more authentic, but even this very basic version makes for a very happy meal. Every “gather-round-the-table” celebration is more enjoyable if the tasks are shared between several, and it isn’t all done “just before”. When a turkey is pulled from the oven, and set to rest on its cutting board, there are usually other pots simmering, and people talking & visiting. So here’s a tip.
Make your gravy ahead of time. Any juices from your bird can be set in the fridge for the next day or two, making it easy to remove any fat. Then the juices can be frozen, ready for the next time you want gravy. The only downside to this is that you need to have kept those juices for that time.
Here’s a do-ahead gravy that is started from scratch, using some bits of poultry like wings, neck, or even chopped up legs. You can make as much as you want on a day that you pick.
For this year’s Thanksgiving feast, the turkey, stuffing, and three side dishes will be brought by others, leaving me to do a couple of pies, cranberry sauce, potatoes & gravy. As ours truly is the “home-that-gathers”, I am looking forward to the happy chatter and laughter that I am so very thankful for.
At a recent dinner, we set out a platter of four-dozen of these, and the platter was emptied within 10 minutes. They are truly a little nibble. Light and fresh, just perfect before a meal, or as a refreshing addition to an appetizer buffet.

Having wanted to design a recipe for an appetizer that didn’t include seafood, cheese, or deep-frying, I came up with a miniature chicken salad, that is usually served in tiny pastry cups, croustades. I have, on occasion, served it on tortilla chips. I’m not sure when I started making these, but do know that it was many years ago! Perhaps back when Mumbai was still Bombay, maybe the early nineties?
Recently I morphed the idea into wraps for a luncheon I was catering, they were gone in a flash. The flavours work just as well in a bigger format.
If you don’t have leftover cooked chicken to use, do what I do, buy a BBQ chicken from your grocer. Chill it, remove all the skin, fat & bones, and use all of the meat. This way you get a prefect mix of light and dark meat. It tends to be more economical than cooking even inexpensive fryer cuts. One standard BBQ chicken should give you about 650 grams of prepared meat, enough for 6 wraps.
The recipe shows amounts for 6 wraps, just use the appropriate portion if you are doing less. All of the ingredients can be prepared ahead of time, ready for assembly at your convenience. Continue reading
